Trying Sue's Challenge and Carol's Quiche

 Since today was a kitchen day anyway -- bread needing making -- I decided to take Sue's Challenge.  She had four potatoes and three fishes.     I didn't have any fish I wanted to use up, but I did have exactly four potatoes left and a ham steak I wanted to use up.


I forgot to photograph the potatoes before I cubed them.
Anyway, potato soup.

4 large potatoes
1 cup of rehydrated green peas (long term storage)
1/2 mason jar of ham broth (from previous ham meal)
1/2 of the ham steak (from freezer fat removed and cubed)
a tiny bit of potato flakes to thicken
pepper (broth salty enough)



At this point the soup is almost ready -- will add potato flakes just before we sit down to eat.

 I still had half of the ham left and decided to try Carol's impossible pie/quiche.
Of course, I used what meat I had on hand.

1/2 of the ham steak, cubed and fried
approximately 1/2 cup of bacon crumbles
1 cup shredded cheddar
5 eggs
1 cup of milk
3/4 cup of Bisquik
pepper
seasoning salt (very little)
onion powder




We'll get one supper and one lunch (hopefully for two) from the soup.
The quiche will be breakfast and leftovers for lunches/snacking this week.
I did manage to get the bread baked, too.
2 traditional loaves
1 batch of hamburger buns
1 large pizza





Eating Down the Pantry is going pretty well all things considered. 
Friday we will be going to town and I have a short list of things I need to pick up.
Mostly perishables...with one or two odd items in there to round out things.

  1. You've been busy! That soup looks wonderful! Cold, raw weather here in CT as we await the arrival of a snow/ice/cold rain storm overnight. Soup would be perfect!

    1. Carol, our temps finally dropped a little today, but not cold enough for snow or ice...just rain for us. It was still a gray overcast day so soup hit the spot.

    1. Thanks Delisa, easy soup. My daughter requests it and hubby surprised me by wiping out what I thought would be leftovers. He jokes that it is like split pea soup, but with more potatoes than peas...lol

  3. Everything looks great, Shara. Your hamburger buns are so perfect. Great job! It is perfect soup weather here too. It's been raining for 4 days straight now.

    1. Belinda, we're back up to almost 70 today. Ugh! We officially have dandelions growing in the yard...lol. To be fair they say back to the 50's tomorrow.
